Slow cooker recipes are my new favourite way to make an easy midweek meal. It's not the preparation I struggle with it's the cooking. You know the juggling the actual food in a pan with checking homework, changing the tumble dryer, putting washing away, feeding the dog. I could go on! But I know you get it because it is most probably your life too. But still we need/want to provide our families with tasty, nutritious food.

So sometimes the food in the pan gets neglected, sticks a bit and needs rescuing with a cup of water (I can't actually believe I am admitting that). Because I am just to busy doing other stuff. I don't want labour intensive meals midweek, I want easy, but still freshly cooked and definitely tasty. Hence why I adore one pot cooking, just throw it in, and leave it to do its magic. Beef is always better cooked in the slow cooker.

  • 700g pack pack of diced beef
  • 1 large chopped onion
  • 3 chopped garlic cloves
  • 1 400g tin of chopped tomatoes, mashed
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  • 1 tsp turmeric
  • ½ tsp coriander
  • ½ tsp cayenne pepper
  • 1 tbsp garam masala
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • 1 tsp lemon juice
  • 1 tsp brown sugar
  • 200 ml beef stock
  • 1 tbsp oil
  • Fresh chopped coriander to garnish
  • Pomegranate seeds to garnish

Method

Heat the oil in a pan and brown off the beef, it also works well to roll the beef in plain flour and add a t spoon of garlic.

Fry the onions for a couple of minutes until they become translucent

Add the chopped onions, garlic, spices, salt and pepper to the slow cooker

Mashed the tomatoes and add to the slow cooker along with the brown sugar.

Add the lemon juice and beef stock and stir.

Put the lid on and leave on medium for 6 hours, stirring occasionally.

Serve with rice and garnish with coriander and pomegranate seeds.
